For the Marinade:

  • 500 grams of mutton pieces, cleaned and washed
  • 1 cup of yoghurt
  • 1/2 tablespoon of ginger-garlic paste
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of red chilli powder
  • Salt to taste

For the Curry:

  • 2 -3 tablespoons of cooking oil
  • Whole spices: 2 bay leaves, 1 inch of cinnamon, 4 cloves, and 1/2 teaspoon of peppercorns.
  • 1 teaspoon of cumin seeds
  • 1 tablespoon of ginger-garlic paste
  • 2 onions, finely chopped
  • 2 tomatoes, chopped
  • 2 green chillies, slit
  • 1 teaspoon of red chilli powder
  • 1 tbsp Kashmiri Red Chilli Powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of cumin powder
  • 1/2 tsp Turmeric Powder
  • 1 teaspoon of garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Water as needed

Step 1:

  1. Combine the cleaned mutton pieces in a bowl with yoghurt, ginger-garlic paste, turmeric powder, red chilli powder, and salt.
  2. Mix the ingredients well, ensuring the mutton pieces are evenly coated.
  3. Allow the mutton to marinate for at least 30 minutes or longer for better flavour absorption.

Step 2: 

  • Heat the cooking oil in the pressure cooker and add whole spices and cumin seeds.
  • Once the spices are fried, add the finely chopped onions.
  • Sauté the onions until golden brown, then add green chillies and Sauté for a few minutes.

Step 3: 

  • Next is where you’ll add red chilli powder, turmeric powder, and Kashmiri red chilli powder. Fry the ingredients for 30 seconds; add the coriander and cumin powder and fry again. 
  • Now, add the chopped tomatoes and cook until the tomatoes are soft and the oil starts to separate.
  • Sauté for a few more minutes to blend the flavours.

Step 5: 

  • Add the marinated mutton to the cooker and mix it with the spice mixture. Cook for a couple of minutes until the mutton starts to brown slightly.
  • Add water (about 1 cup) to create the desired consistency of your curry. Close the pressure cooker’s lid and cook on medium heat until you hear one whistle.
  • Reduce the heat to low and let it simmer for 10-15 minutes.

  • After the pressure releases naturally, open the cooker.
  • Add garam masala and garnish the mutton curry with fresh coriander leaves.
